This is our last full week in the US. This week has been a bit of a whirlwind: catching up with friends we missed earlier in our vacation, putting the finishing touches on a quilt for one grandson and an afghan for the other, completing a few projects with my sister and exploring the usage of the Instant Pot I purchased for my son (verdict: LOVE IT!)
The first meal was a corned beef brisket for St Patrick’s Day followed by beans of all shapes and sizes, hard boiled eggs, and several one pot meals with different types of meat. A favorite was the Greek style chicken thighs with fingerling potatoes shown above. Now, I’ll be honest…I can easily cook many of these meals on the stove but I have been impressed with the flavors and textures of the food coming out of the Instant Pot as well as how easy it is to clean. Plus there’s something to be said for the ability to put a bunch of food into the pressure cooker, sealing it up and walking away until it’s ready. I think my son will get a lot of use out of it.
The Instant Pot is definitely worth the investment, and you can often catch it on sale on Amazon for around $70. (affiliate link) When I bought mine, Amazon recommended a cookbook which I also purchased. There are a ton of great recipes to be found on Pinterest and the internet as well.

I fell in love with this clever wreath stand from Handan at The Navage Patch. She was inspired by a Hobby Lobby find and combined it with a bunch of odd bits from her craft supply to make an attractive way to display a pretty wreath without a door 🙂 There are tons of great ideas on this blog plus Handan and her husband Greg bring the jokes.

LOVE the wreath and the wreath stand! I’ve displayed wreaths on walls and as a centerpiece with a candle for awhile now, but I’ve not thought of doing it this way.
